Breakfast Burritos

  • 12 eggs, slightly beaten
  • 1 [7-ounce / 200-mL] can green chile dices, drained
  • 1 tablespoon [15 mL] oil or butter [15 g]
  • 2 green onions, into thin slices [optional]
  • 24 slices pre-cooked bacon, diced
  • 1 [16-ounce / 454-mL] can refried beans
  • Any desired salsa, to taste
  • 2 cups [450 g] grossly grated Cheddar cheese
  • 12 [10-inch / 25-cm each] warm flour tortillas
  • Into a large bowl, well mix together beaten eggs and drained green chile dices.
  • Over medium heat, heat oil or butter into a large frypan.
  • If desired, add green onion slices before adding bacon dices; brow for 45 seconds.
  • Pour in beaten eggs.
  • Cook eggs stirring from time to time for approximately 4 to 6 minutes, until well-done yet still a little wet.
  • Spread 2 tablespoons [30 mL] refried beans, 1/3 cup [80 mL] eggs mixture, some salsa and 3 tablespoons [45 g] grated cheddar cheese in the middle of each flour tortilla.
  • Roll and serve burritos.
