- 2 avocados
- 1 lemon juice
- 1/2 teaspoon [2.5 mL] ginger puree
- 1/2 teaspoon [2.5 mL] lemongrass puree
- 1/4 teaspoon [1 mL] cilantro puree
- 1/4 cup [60 mL] grape seed oil
- 2 green onions, finely minced
- 1 tomato, finely chopped

- Into a food processor, puree together avocado and lemon juice.
- Stir in ginger, lemongrass and cilantro purees.
- Slowly pour in grape seed oil, working mixture into a mayonnaise.
- Transfer into a mixing bowl; delicately stir in minced green onions and finely chopped tomato.
