Avocado Sauce

Comments: Equally good with fish, seafood or a fondue.
Servings: Approximately 1 1/2 cups [375 mL]
  • 2 avocados
  • 1 lemon juice
  • 1/2 teaspoon [2.5 mL] ginger puree
  • 1/2 teaspoon [2.5 mL] lemongrass puree
  • 1/4 teaspoon [1 mL] cilantro puree
  • 1/4 cup [60 mL] grape seed oil
  • 2 green onions, finely minced
  • 1 tomato, finely chopped
  • Into a food processor, puree together avocado and lemon juice.
  • Stir in ginger, lemongrass and cilantro purees.
  • Slowly pour in grape seed oil, working mixture into a mayonnaise.
  • Transfer into a mixing bowl; delicately stir in minced green onions and finely chopped tomato.
