Barbecue Sauce with Fresh Ginger

  • 20 dried prunes
  • 1/2 medium-size onion, chopped
  • 4 cloves garlic, chopped
  • 2 small slices fresh ginger
  • 2 tablespoons [30 mL] red wine vinegar
  • 3 tablespoons [45 mL] apple jelly
  • 2 tablespoons [30 mL] cornstarch
  • 2 tablespoons [30 mL] Brandy
  • Water
  • Into a food processor, puree together dried prunes, onion, garlic, ginger, red wine vinegar and apple jelly.
  • Pour into a skillet; pour in just a litle water and simmer for a few minutes, to thicken sauce.
  • Towards the end the cooking time, combine cornstarch and Brandy; well mix into sauce and simmer for 1 more minute.
  • Serve.
