Barbecue Sauce for Diabetics

Servings: 8 [2 tablespoons / 30 mL each]
  • 1 cup [250 mL] tomato juice
  • 2 tablespoons [30 mL] liquid beef concentrate
  • 1 teaspoon [5 mL] vinegar
  • 1 garlic clove
  • Pinch dry mustard
  • 1 tablespoon [15 mL] chopped celery leaves
  • Paprika, to taste
  • 1 bay leaf
  • 2 tablespoons [30 mL] chopped onion
  • 1/4 cup [60 mL] chopped sweet green pepper
  • 2 teaspoons [10 mL] cornstarch
  • 1 tablespoon [15 mL] cold water
  • Combine all ingredients, except cornstarch and cold water, into a saucepan.
  • Bring to a boil; simmer for 3 minutes.
  • Strain.
  • Mix together cornstarch and water; stir into sauce.
  • Simmer over low heat, stirring until thickened.
