Barbecue Sauce

  • 4 tablespoons [60 mL] oil
  • 1 very large onion, finely chopped
  • 2 celery stalks, finely chopped
  • 1 [20-ounce / 568-mL] can tomato juice
  • 1 [20-ounce / 568-mL] jar ketchup
  • Pinch barbecue seasonings
  • 5 tablespoons [75 mL] Worcestershire sauce
  • 5 tablespoons [75 mL] brown sauce
  • 1 tablespoon [15 mL] vinegar
  • Juice of 1/2 a lemon
  • 1/4 teaspoon [1 mL] mustard
  • Salt and pepper, to taste
  • A little onion salt
  • Any other spices, to taste
  • Melt together chopped onion and celery stalk into hot oil.
  • Mix in tomato juice, ketchup, barbecue seasonings, Worcestershire and brown sauces, vinegar, lemon juice, mustard, salt and pepper, onion salt and any other desired spices.
  • Bring to a boil; simmer for approximately 15 minutes, longer for a thicker sauce.
  • For a smooth sauce, strain mixture.
