- 1/4 pound [113 g] bacon, cut into thin strips
- 1 tablespoon [15 mL] oil
- 1 cup [250 mL] cream [15%]
- 3 egg yolks
- 1/4 cup [60 g] freshly grated Parmesan cheese
- Freshly ground black pepper, to taste

- Into a casserole, fry bacon strips into hot oil over low heat, until golden; discard fat.
- Mix in cream, egg yolks and grated Parmesan sheese, stirring.
- Reheat without boiling.
- Sprinkle with ground pepper.
