Carbonara Sauce

Comments: If desired, use diced ham, prosciutto or pancetta instead of bacon.

  • 1/4 pound [113 g] bacon, cut into thin strips
  • 1 tablespoon [15 mL] oil
  • 1 cup [250 mL] cream [15%]
  • 3 egg yolks
  • 1/4 cup [60 g] freshly grated Parmesan cheese
  • Freshly ground black pepper, to taste
  • Into a casserole, fry bacon strips into hot oil over low heat, until golden; discard fat.
  • Mix in cream, egg yolks and grated Parmesan sheese, stirring.
  • Reheat without boiling.
  • Sprinkle with ground pepper.
