Apple Brandy Sauce

Comments: A delicous, easy to freeze sauce when thickened.

  • 2 cups [500 mL] chicken broth
  • 2 apples, peeled and diced
  • 2 green onions, chopped
  • 1 cup [250 mL] thick cream [35% m.s.g.]
  • 1 tablespoon [15 mL] Brandy
  • Salt and pepper
  • Into a saucepan, mix together chicken broth, apple dices and chopped green onions.
  • Simmer, over medium heat, for 30 minutes.
  • Pour in cream; simmer for 15 minutes longer.
  • Puree mixture into a food processor; stir in Brandy.
  • Salt and pepper, to taste.
