- 2 cups [500 mL] chicken broth
- 2 apples, peeled and diced
- 2 green onions, chopped
- 1 cup [250 mL] thick cream [35% m.s.g.]
- 1 tablespoon [15 mL] Brandy
- Salt and pepper

- Into a saucepan, mix together chicken broth, apple dices and chopped green onions.
- Simmer, over medium heat, for 30 minutes.
- Pour in cream; simmer for 15 minutes longer.
- Puree mixture into a food processor; stir in Brandy.
- Salt and pepper, to taste.
