Neapolitan Sauce

Comments: A Italian basic sauce, served over pasta and then sprinkled with grated Parmesan cheese.
Arrabiata sauce: Neapolitan sauce + white wine + dried peppers.
Matriciana sauce: Neapolitan sauce + dried peppers + pancetta.
Putanesca sauce: Neapolitan sauce + capers + ripe olives + anchovies + dried peppers.

IngredientsPreparation
  • 2 tablespoons [30 mL] olive oil
  • 3 garlic cloves, minced
  • 2 onions, chopped
  • 1 [28-ounce / 796-mL] can Italian tomatoes, undrained
  • 1 teaspoon [5 mL] basil
  • 2 teaspoons [10 mL] tarragon
  • Salt and pepper, to taste
  • Brown minced garlic and chopped onions into hot olive oil.
  • Stir in Italian tomatoes with juice.
  • Sprinkle with basil, tarragon, salt and pepper.
  • Simmer for 20 minutes.
