- 1 tablespoon [15 mL] butter
- 2 green onions, sliced
- 1 cup [250 mL] freshly sliced mushrooms
- 1 cup [250 mL] cream [15 or 35% m.s.g.]
- 1/4 cup [60 mL] white wine
- Salt and pepper
- Liquid beef concentrate [optional]

- Melt butter over low heat [do not brown].
- Melt green onion slices into melted butter for 3 to 4 minutes.
- Mix in mushroom slices, cream and white wine; simmer over low heat until creamy.
- Sprinkle with a little salt and pepper and, if desired, to give it a little color and a little more taste, mix in just a little liquid beef concentrate.
