- 25 ounces [780 mL] brown sauce
- 5 cups [1.25 L] beef broth or consomme
- 2 tablespoons [30 mL] mushroom scraps
- 5 tablespoons [75 mL] Madeira wine

- Mix together brown sauce, beef broth or consomme and mushroom scraps, into a large casserole.
- Bring to a boil, over medium heat.
- Lower heat; cook until reduce to 1/3 of its volume.
- Pour in Madeira wine.
- Strain through a sieve, lined with cottoncheese cloth.
