Cold Green Sauce

Comments: Using a food processor or a blender, this sauce can be ready in just a few minutes. Otherwise, the ingredients must be very finely chopped.
This cold sauce, which requires no cooking, is just as good with hot or cold fish.
  • 1/2 cup [125 mL] freshly coarsely chopped green onion or chives
  • 1/2 cup [125 mL] freshly coarsely chopped parsley
  • 1/2 cup [125 mL] freshly coarsely chopped spinach leaves
  • 2 tablespoons [30 mL] freshly squeezed lemon juice
  • 1 cup [250 mL] mayonnaise
  • Chop together green onions or chives, parsley and spinach leaves.
  • Spoon into a food processor or a blender; pour in lemon juice.
  • Chop into really tiny pieces.
  • Transfer into a bowl; well stir in mayonnaise.
  • Keep refrigerated, into an airtight container.
