Cranberry-Orange Sauce

Servings: 4 1/2 cups [1.125 L]
  • 4 cups [1 L] fresh cranberries
  • 2 cups [500 mL] sugar
  • 1 cup [250 mL] chopped dried apricots
  • 1 cup [250 mL] raisins
  • 1 cup [250 mL] water
  • 1 cup [250 mL] orange juice
  • 1 tablespoon [15 mL] grated orange rind
  • Mix together cranberries, sugar, chopped dried apricots, raisins, water, orange juice and grated orange rind into a large saucepan.
  • Stir over medium heat until sugar is dissolved.
  • Higher heat, cover and boil until cranberries burst, for approximately 8 minutes, stirring occasionally.
  • Pour mixture into a bowl.
  • Cover and refrigerate until cold [mixture will thicken as it cools down].
