Barbecue Sauce with Apricot Jam

  • 1/2 cup [125 mL] vegetable oil
  • 2 large onions, chopped
  • 4 cloves garlic, minced
  • 1 1/2 teaspoons [7.5 mL] kosher salt
  • 1 tablespoon [15 mL] freshly ground pepper
  • 1/4 teaspoon [1 mL] Cayenne pepper
  • 1 tablespoon [15 mL] paprika
  • 4 tablespoons [60 mL] wine vinegar
  • 5 1/2 cups [1.375] ketchup
  • 1 cup [250 mL] packed brown sugar
  • 4 tablespoons [60 mL] tomato paste
  • 1/4 cup [60 mL] apricot jam
  • Tabasco sauce, to taste
  • 1 tablespoon [15 mL] Worcestershire sauce
  • 1 cup [250 mL] soy sauce
  • 1/2 cup [125 mL] liquid honey
  • 1 tablespoon [15 mL] lemon juice
  • 2 tablespoons [30 mL] Dijon mustard
  • Prehat oil into a saucepan until hot.
  • Stirring, soften together chopped onions and minced garlic into hot oil, over medium heat.
  • Add kosher salt, freshly ground pepper, Cayenne pepper and paprika.
  • Cook for approximately 10 minutes more.
  • Stir in wine vinegar and cook for another 10 minutes.
  • Mix in ketchup, brown sugar, tomato paste, apricot jam, Tabasco sauce, Worcestershire sauce, soy sauce, liquid honey, lemon juice and Dijon mustard.
  • Stirring often, leave mixture to simmer for 1 hour, covered.
