Coffee Tomato Sauce
Servings: Approximately 2 cups [500 mL]

  • 1 tablespoon [15 mL] oil
  • 4 green onions, minced
  • 1 to 3 garlic cloves, minced
  • 1/4 cup [60 mL] freshly sliced mushrooms
  • 6 ounces [190 mL] tomato paste
  • 3/4 cup [190 mL] strong coffee
  • 3/4 cup [190 mL] beef or vegetable broth
  • 1 teaspoon [5 mL] oregano
  • 1 teaspoon [5 mL] basil
  • 1/2 teaspoon [2.5 mL] paprika
  • 1/4 teaspoon [1 mL] salt, or to taste
  • 1/4 teaspoon [1 mL] pepper, or to taste
  • Heat oil into a large casserole.
  • Brown together minced green onions, minced garlic and mushroom slices into hot oil.
  • Stir in tomato paste, until well blended.
  • Then stir in coffee, beef or vegetable broth, oregano, basil and paprika; salt and pepper.
  • Leave to simmer until thickened before serving.
