- 1 tablespoon [15 mL] oil
- 4 green onions, minced
- 1 to 3 garlic cloves, minced
- 1/4 cup [60 mL] freshly sliced mushrooms
- 6 ounces [190 mL] tomato paste
- 3/4 cup [190 mL] strong coffee
- 3/4 cup [190 mL] beef or vegetable broth
- 1 teaspoon [5 mL] oregano
- 1 teaspoon [5 mL] basil
- 1/2 teaspoon [2.5 mL] paprika
- 1/4 teaspoon [1 mL] salt, or to taste
- 1/4 teaspoon [1 mL] pepper, or to taste

- Heat oil into a large casserole.
- Brown together minced green onions, minced garlic and mushroom slices into hot oil.
- Stir in tomato paste, until well blended.
- Then stir in coffee, beef or vegetable broth, oregano, basil and paprika; salt and pepper.
- Leave to simmer until thickened before serving.
