Creamy Cucumber Sauce for Fish

Serve it with your favortie fish such as sole, haddock, trout, salmon,.... almost any fish.

IngredientsPreparation
  • 1 tablespoon [15 g] butter
  • 2 unpeeled English cucumbers, into tiny dices
  • 1 small onion, finely chopped
  • 1 cup [250 mL] fish stock [optional]
  • 2 tablespoons [30 mL] cornstarch
  • 1 cup [250 mL] heavy whipping cream [35%]
  • 1 fresh dill sprig
  • 1 pinch dried mint
  • Salt and freshly ground pepper, to taste
  • Melt butter into a small casserole.
  • Melt together cucumber dices and chopped onion over low heat for 10 minutes.
  • Stir in fish stock.
  • Dilute cornstarch into cream then slowly pour it into first mixture stirring.
  • Add dill sprig and dried mint; salt and pepper
  • Bring sauce to a boil immediately remove from heat.
  • Puree sauce into a blender for 1 minute.
  • Serve immediately.
