Creamy Cucumber Sauce for Fish

The fresh summer flavor of this sauce is a revelation for any poached or steamed fish !
Serve it with your favortie fish such as sole, haddock, trout, salmon,.... almost any fish.

| Ingredients | Preparation |
- 1 tablespoon [15 g] butter
- 2 unpeeled English cucumbers, into tiny dices
- 1 small onion, finely chopped
- 1 cup [250 mL] fish stock [optional]
- 2 tablespoons [30 mL] cornstarch
- 1 cup [250 mL] heavy whipping cream [35%]
- 1 fresh dill sprig
- 1 pinch dried mint
- Salt and freshly ground pepper, to taste

- Melt butter into a small casserole.
- Melt together cucumber dices and chopped onion over low heat for 10 minutes.
- Stir in fish stock.
- Dilute cornstarch into cream then slowly pour it into first mixture stirring.
- Add dill sprig and dried mint; salt and pepper
- Bring sauce to a boil immediately remove from heat.
- Puree sauce into a blender for 1 minute.
- Serve immediately.
