- 3 tablespoons + 1 teaspoon [50 g] butter
- 2 cups [500 mL] freshly shelled oysters
- Juices from the oysters
- 4 cups [1 L] milk
- 1 1/2 teaspoons [7.5 mL] salt
- Dash of pepper

- Melt butter; add oysters, with juices.
- Simmer for approximately 3 minutes.
- Heat milk; slowly pour over oysters, stirring.
- Salt and pepper.
- Serve immediately.
