Brown Sugar or Maple Sugar Fudge

If desired, you can use maple sugar instead of brown sugar.

| Ingredients | Preparation |
- 1 cup [200 g] sugar
- 1 cup [250 mL] brown sugar
- 1 cup [250 mL] heavy cream [35%]
|
- Into a large casserole, mix together all ingredients until smooth.
- Bring to a boil.
- Cook over medium heat until mixture reaches soft ball stage, 240°F [115°C] onto a candy thermometer.
- Do not stir while cooking.
- Transfer casserole into a sink filled with cold water, up to half of casserole.
- Beat until mixture just starts to hold itself.
- Pour into a glass dish or onto a marble slab.
- Leave to cool before cutting.
