Brown Sugar or Maple Sugar Fudge

Comments: If desired, you can use maple sugar instead of brown sugar.

  • 1 cup [200 g] sugar
  • 1 cup [250 mL] brown sugar
  • 1 cup [250 mL] heavy cream [35%]
  • Into a large casserole, mix together all ingredients until smooth.
  • Bring to a boil.
  • Cook over medium heat until mixture reaches soft ball stage, 240°F [115°C] onto a candy thermometer.
  • Do not stir while cooking.
  • Transfer casserole into a sink filled with cold water, up to half of casserole.
  • Beat until mixture just starts to hold itself.
  • Pour into a glass dish or onto a marble slab.
  • Leave to cool before cutting.
