Chocolate, 'Oh Henry'-Style

  • 1 cup [250 mL] creamy peanut butter
  • 1 cup [250 mL] brown sugar
  • 1 cup [250 mL] corn syrup
  • 4 cups [1 L] oven-toasted rice grain cereals
  • 1/2 cup [125 mL] unsalted peanuts [optional]
  • 1/2 bar paraffin
  • 12 ounces [340 g] chocolate chips
  • Over low heat, melt together peanut butter, brown sugar and corn syrup, stirring constantly [do not boil].
  • Remove from heat; stir in cereals and, if desired, unsalted peanuts.
  • Spread into a buttered pan; cool for 30 minutes.
  • In the upper part of a double-boiler, melt together paraffin and chocolate chips.
  • Cut cereals mixture into squares; dip squares into melted chocolate mixture.
