Chocolate Coated Roll

  • 1 cup [250 mL] semi-sweet chocolate chips
  • 2 tablespoons [30 mL] butter or margarine
  • 1 beaten egg
  • 1 cup [250 mL] icing sugar
  • 2 1/2 cups [625 mL] mini marshmallows
  • 1/2 cup [125 mL] maraschino cherries, quartered
  • 1/2 cup [125 mL] minced walnuts
  • Coconut to coat
  • Melt together chocolate chips and butter, over low heat.
  • Take away from heat.
  • Well mix in beaten egg, icing sugar, mini marshmallows, cherry pieces and minced walnuts.
  • Leave to cool if too hot to handle.
  • Shape mixture into a roll.
  • Spread coconut onto a piece wax paper, cut large enough to coat the roll easily.
  • Wrap well coated roll into wax paper.
  • Cool completely before slicing.
  • Slice roll into thin slices, using a clean sharp knife.
