- 1 cup [250 mL] semi-sweet chocolate chips
- 2 tablespoons [30 mL] butter or margarine
- 1 beaten egg
- 1 cup [250 mL] icing sugar
- 2 1/2 cups [625 mL] mini marshmallows
- 1/2 cup [125 mL] maraschino cherries, quartered
- 1/2 cup [125 mL] minced walnuts
- Coconut to coat

- Melt together chocolate chips and butter, over low heat.
- Take away from heat.
- Well mix in beaten egg, icing sugar, mini marshmallows, cherry pieces and minced walnuts.
- Leave to cool if too hot to handle.
- Shape mixture into a roll.
- Spread coconut onto a piece wax paper, cut large enough to coat the roll easily.
- Wrap well coated roll into wax paper.
- Cool completely before slicing.
- Slice roll into thin slices, using a clean sharp knife.
