Barley Sugar Lollipops

Comments: Even though red is the usual color, you can color these into different colours and use different shape molds, using special candy molds with small sticks.
Ex: orange-tinted witches, pink-tinted rabbits, yellow-tinted chicks, green tinted shamrocks or Christmas trees and, of course, red tinted Santas, reindeers...
If desired, decorate lollipops with tiny candies while still soft.
IngredientsPreparation
  • 2 cups [400 g] sugar
  • 1 cup [250 mL] water
  • 1 tablespoon [15 mL] vinegar
  • Food coloring [red, green, yellow, and/or orange...]
  • Bring sugar, water and vinegar to a boil; boil until candy thermometer reaches 290°F [143°C], cracking stage.
  • Mix in food coloring[s], into separate bowls if necessary.
  • Pour into lightly buttered shaped molds and press in a small stick, use small popsicle molds with sticks for larger lollipops, or simply drop a little mixture at a time onto a buttered waxed paper.
  • Leave to harden.
