Almond Paste Stuffed Dates

  • 2/3 cup [160 mL] finely ground almonds
  • 1/2 cup [125 mL] sugar
  • 1 egg white, slightly beaten
  • 1 teaspoon [5 mL] rum or sherry
  • 1 teaspoon [5 mL] sour almond extract
  • 2 or 3 drops food coloring [optional - red and green for Christmas]
  • 24 dates
  • Nut pieces and/or almond halves
  • Well mix together ground almonds and sugar.
  • Mix in beaten egg white, rum or sherry and sour almond extract.
  • Beat well, using a spoon.
  • If desired, pour in food coloring; mix well.
  • Divide paste into 24 equal parts.
  • Shape each part into a small almond.
  • Half dates lengthwise; remove stones.
  • Fill dates with almond paste.
  • Decorate each date with a piece of nut or half an almond, pressing lightly into almond paste.
