- 2/3 cup [160 mL] finely ground almonds
- 1/2 cup [125 mL] sugar
- 1 egg white, slightly beaten
- 1 teaspoon [5 mL] rum or sherry
- 1 teaspoon [5 mL] sour almond extract
- 2 or 3 drops food coloring [optional - red and green for Christmas]
- 24 dates
- Nut pieces and/or almond halves

- Well mix together ground almonds and sugar.
- Mix in beaten egg white, rum or sherry and sour almond extract.
- Beat well, using a spoon.
- If desired, pour in food coloring; mix well.
- Divide paste into 24 equal parts.
- Shape each part into a small almond.
- Half dates lengthwise; remove stones.
- Fill dates with almond paste.
- Decorate each date with a piece of nut or half an almond, pressing lightly into almond paste.
