Almond Cherry Chocolates

Comments: Will keep for up to 3 weeks, into an airtight container, wax paper between each row.

IngredientsPreparation
  • 3 1/2 ounces [100 g] dark chocolate
  • 1 ounce [30 g] blanched almonds, grossly chopped
  • 8 candied cherries, quartered
  • Grate or chop chocolate.
  • Into a frypan, brown almonds until golden brown, stirring from time to time.
  • Cool.
  • Into the upper part of a double boiler, melt grated or chopped chocolate, stirring until smooth.
  • Spoon mixture into mounds, onto wax paper; flatten into thick circles.
  • When partly hardened, sprinkle chopped almonds all around each circle.
  • Arrange one quarter cherry into the center of each circle.
  • Leave to harden.
  • Remove wax paper.
