- 3 1/2 ounces [100 g] dark chocolate
- 1 ounce [30 g] blanched almonds, grossly chopped
- 8 candied cherries, quartered

- Grate or chop chocolate.
- Into a frypan, brown almonds until golden brown, stirring from time to time.
- Cool.
- Into the upper part of a double boiler, melt grated or chopped chocolate, stirring until smooth.
- Spoon mixture into mounds, onto wax paper; flatten into thick circles.
- When partly hardened, sprinkle chopped almonds all around each circle.
- Arrange one quarter cherry into the center of each circle.
- Leave to harden.
- Remove wax paper.
