Caramel Filling for Chocolates

  • 1 [10 1/2-ounce 300-mL] can sweetened condensed milk
  • 3 cups [750 mL] brown sugar
  • 1 cup [250 mL] butter
  • 1 cup [250 mL] corn syrup
  • In a saucepan, well mix together sweetened condensed milk, brown sugar, butter and corn syrup.
  • Bring to boil, over medium heat; boil until 245°F [118°C] is registered on a candy thermometer.
  • Cool to room temperature.
  • Store in an airtight container.
