Creamy Chocolate Fudge

  • 1 cup [250 mL] heavy cream [35% m.s.g.]
  • 1 cup [250 mL] sugar
  • 1 cup [250 mL] brown sugar
  • 1 tablespoon [15 mL] butter
  • 1 teaspoon [5 mL] vanilla
  • 1 cup [250 mL] chocolate chips
  • Nuts, to taste
  • In a saucepan, mix together heavy cream, sugar and brwon sugar; bring to a boil.
  • Cook for approximately 10 minutes, stirring at halftime
  • Mixture should reach 240°F [116°C] on a candy thermometer.
  • Pour into a bowl, add butter and vanilla; beat with an electric mixer for approximately 5 minutes, until thick and creamy.
  • Add chocolate chips and nuts; stir with a spatula until smooth.
  • Pour into a buttered dish.
  • Refrigerate.
  • To serve, cut into squares.
