Coconut Balls

  • 1/2 cup [125 mL] margarine or butter
  • 1/2 cup [125 mL] evaporated milk
  • 2 cups [500 mL] sugar
  • 3 cups [750 mL] rolled oats
  • 1 cup [250 mL] grated coconut
  • 8 tablespoons [120 mL] cocoa powder
  • 1 teaspoon [5 mL] vanilla
  • Into a casserole, mix together margarine or butter, evaporated milk and sugar.
  • Bring to a boil; boil for 3 minutes.
  • Remove from heat; mix in rolled oats, coconut, cocoa powder and vanilla, until well mixed.
  • Spoon mounds onto a buttered baking sheet.
  • Refrigerate for approximately 2 hours before serving.
