Date Balls

Comments: Excellent snack for students.
Servings: 24 balls
  • 2 eggs
  • 1 cup [250 mL] sugar
  • 3/4 cup [190 mL] butter
  • 1 cup [250 mL] chopped dates
  • 3 cups [750 mL] toasted rice grain cereals
  • Grated coconut
  • Beat eggs; slowly beat sugar into beaten eggs.
  • Into a frypan, melt butter.
  • Over medium heat, stir in beaten eggs mixture and dates.
  • Stir until thick and lightly browned.
  • Remove from heat.
  • Cool to room temperature.
  • Mix in toasted rice grain cereals; shape mixture into 1 to 1 1/2-inch [2.5 to 3.75-cm] balls.
  • Roll each ball into grated coconut.
