- 1 [11-ounce / 312-g] package dried apricots
- 2 cups [400 g] sugar
- 1/4 cup [60 mL] orange juice
- 1 tablespoon [15 mL] grated orange rind
- Water
- Granulated sugar, for rolling

- Leave dried apricots to soak, covered with water, for 3 hours.
- Throw away excess water and process soaked apricots into a food processor, food mill or blender until chopped finely, into a coarse paste.
- Pour processed apricots into a large saucepan or the top part of a double boiler.
- Mix in sugar, orange juice and grated orange rind and bring to a boil.
- Leave to boil for approximately 15 to 20 minutes, until thick enough to hold shape when dropped on waxed paper.
- Leave to cool then roll each apricot into granulated sugar until completely coated.
- Store completely cooled coated apricots into an airtight container.
