Candied Apricots

  • 1 [11-ounce / 312-g] package dried apricots
  • 2 cups [400 g] sugar
  • 1/4 cup [60 mL] orange juice
  • 1 tablespoon [15 mL] grated orange rind
  • Water
  • Granulated sugar, for rolling
  • Leave dried apricots to soak, covered with water, for 3 hours.
  • Throw away excess water and process soaked apricots into a food processor, food mill or blender until chopped finely, into a coarse paste.
  • Pour processed apricots into a large saucepan or the top part of a double boiler.
  • Mix in sugar, orange juice and grated orange rind and bring to a boil.
  • Leave to boil for approximately 15 to 20 minutes, until thick enough to hold shape when dropped on waxed paper.
  • Leave to cool then roll each apricot into granulated sugar until completely coated.
  • Store completely cooled coated apricots into an airtight container.
