- 24 dates
- 24 prunes
- 48 pecan halves
- 4 tablespoons [60 mL] melted honey
Almond paste
- 1 cup [200 g] sugar
- 1/2 teaspoon [2.5 mL] lemon juice
- 2/3 cup [160 mL] water
- 3/4 cup [190 mL] almond powder

- Prepare almond paste.
- Slit open then stone dates and prunes.
- Evenly stuff each fruit with a little cooled almond paste.
- Garnish each fruit with a pecan half.
- Brush each fruit with melted honey, and serve.
Almond paste
- Into a heavy saucepan, mix together sugar, lemon juice and water.
- Bring to a boil; simmer for 4 minutes, then remove from heat.
- Using a wooden spoon, stir in almond powder, until smooth.
- Leave to cool completely.
