Almond Paste Stuffed Dates and Prunes

  • 24 dates
  • 24 prunes
  • 48 pecan halves
  • 4 tablespoons [60 mL] melted honey
Almond paste
  • 1 cup [200 g] sugar
  • 1/2 teaspoon [2.5 mL] lemon juice
  • 2/3 cup [160 mL] water
  • 3/4 cup [190 mL] almond powder
  • Prepare almond paste.
  • Slit open then stone dates and prunes.
  • Evenly stuff each fruit with a little cooled almond paste.
  • Garnish each fruit with a pecan half.
  • Brush each fruit with melted honey, and serve.
Almond paste
  • Into a heavy saucepan, mix together sugar, lemon juice and water.
  • Bring to a boil; simmer for 4 minutes, then remove from heat.
  • Using a wooden spoon, stir in almond powder, until smooth.
  • Leave to cool completely.
