Coconut, Date and Nut Balls

  • 2 eggs
  • 1 cup [200 g] sugar
  • 1 [8-ounce / 227-g] pack stoned dates, chopped
  • 1 cup [250 mL] grated coconut
  • 1 cup [250 mL] chopped nuts
  • 1 teaspoon [5 mL] vanilla
  • 1/4 teaspoon [1 mL] almond extract
  • Sugar
  • Preheat oven to 350°F [180°C].
  • Beat eggs.
  • Well beat in 1 cup [200 g] sugar.
  • Mix in chopped dates, grated coconut, chopped nuts, vanilla and almond extract.
  • Evenly pour into 2 [8-cup / 2-L each] ungreased casseroles.
  • Bake into preheated oven, for 30 minutes.
  • Remove from oven; using a wooden spoon, immediately beat mixtures.
  • Leave to cool until easy to handle, then shape mixture into small balls.
  • Roll balls into sugar, until well coated; leave to cool completely.
