- 2 eggs
- 1 cup [200 g] sugar
- 1 [8-ounce / 227-g] pack stoned dates, chopped
- 1 cup [250 mL] grated coconut
- 1 cup [250 mL] chopped nuts
- 1 teaspoon [5 mL] vanilla
- 1/4 teaspoon [1 mL] almond extract

- Preheat oven to 350°F [180°C].
- Beat eggs.
- Well beat in 1 cup [200 g] sugar.
- Mix in chopped dates, grated coconut, chopped nuts, vanilla and almond extract.
- Evenly pour into 2 [8-cup / 2-L each] ungreased casseroles.
- Bake into preheated oven, for 30 minutes.
- Remove from oven; using a wooden spoon, immediately beat mixtures.
- Leave to cool until easy to handle, then shape mixture into small balls.
- Roll balls into sugar, until well coated; leave to cool completely.
