Bear Paw Chocolates

  • 1 cup [140 g] butter
  • 2 eggs, beaten
  • 2 cups [500 mL] icing sugar
  • 2 [6-ounce / 170-g] each packs semi-sweet chocolate chips
  • 1 teaspoon [5 mL] vanilla
  • 2 bags colored miniature marshmallows
  • Into the top part of a double boiler, over hot yet not boiling water, melt together butter, beaten eggs, icing sugar and semi-sweet chocolate chips.
  • Remove from heat; leave to cool slightly before stirring in vanilla, and miniature marshmallows.
  • Leave to cool until starting to set.
  • Spoon 1/4th of mixture onto wax paper and shape mixture into a roll; refrigerate.
  • Repeat with remaining mixture; refrigerate each roll as soon as it is ready.
  • Slice really cold rolls.
