Chocolate Chip Miniature Marshmallow Fudge

Servings: 1 [8-inch / 20-cm] square pan
  • 1 3/4 cups [350 g] sugar
  • 1/4 cup [60 g] butter
  • 1/2 cup [125 mL] evaporated milk
  • 2 cups [500 mL] miniature marshmallows
  • 1 cup [250 mL] chocolate chips
  • 1 teaspoon [5 mL] vanilla
  • 1/2 cup [125 mL] chopped nuts [optional]
  • Mix together sugar, butter and evaporated milk into a casserole.
  • Cook mixture over medium heat stirring until boiling.
  • Lower heat to low and leave mixture to heat for approximately 5 minutes more, until sugar is completely dissolved.
  • Remove from heat and immediately stir in miniature marshmallows, chocolate chips, vanilla and, if desired, chopped nuts, working as fast as possible.
  • Pour into a lightly greased 8-inch [20-cm] square pan.
  • Refrigerate fudge for 45 minutes, before cutting into squares.
