Crunchy Meringues

  • 1 egg white
  • Pinch of salt
  • 6 tablespoons [90 g] sugar
  • 1 ounce [30 mL] corn flakes cereal crumbs
  • 2 ounces [60 g] dark chocolate, grated
  • Preheat oven to 350°F [180°C].
  • Into a small bowl, beat together egg white and salt, until firm.
  • Slowly beat in sugar, beating until stiff peaks form.
  • Into a clean bowl, mix together cereal crumbs and grated dark chocolate.
  • Fold chocolate mixture into firmly beaten egg white mixture.
  • Arrange spoonfuls of mixture onto a greased baking sheet.
  • Bake into preheated oven for 20 minutes, until firm to the touch.
  • Using a spatula, immediately transfer meringues onto a wire rack, to cool completely.
