Almond Paste Candied Cherry Balls

  • 3 1/2 ounces [100 g] whole candied cherries
  • 7 ounces [200 g] almond paste
  • 1 egg white
  • Few drops red food coloring
  • Preheat oven to 450°F [230°C].
  • Finely chop 2 4/5 ounces [80 g] of candied cherries.
  • Mix together chopped candied cherries, almond paste and egg white.
  • Shape mixture into balls; completely cover each remaining whole candied cherry with almond paste mixture.
  • Bake into preheated oven for 10 to 15 minutes.
  • Leave to cool completely, before serving.
