- 12 1/3 ounces [350 g] chocolate
- 3 tablespoons [45 mL] milk
- 1/2 cup - 1 tablespoon [100 g] butter
- 3 eggs, whites and yolks separated
- 1 3/4 ounces [50 g] unsweetened cocoa powder

- Melt chocolate into a double-boiler before mixing in milk.
- Remove from heat; quickly stir in butter.
- Reheat mixture over really low heat.
- Remove from heat, add and thouroughly mix in egg whites.
- One at a time, slowly mix in egg yolks.
- Leave to cool completely, before refrigerating mixture for at least 2 hours.
- Then, using 2 small spoons, shape mixture into truffles.
- Roll truffles into unsweetened cocoa powder, until completely coated.
