Chocolate Marshmallow Fudge

  • 2 tablespoons [30 g] butter
  • 2/3 cup [160 mL] evaporated milk
  • 1 2/3 cups [330 g] sugar
  • 1/2 teaspoon [2.5 mL] salt
  • 2 cups [500 mL] miniature marshmallows
  • 1 1/2 cups [375 mL] semi-sweet chocolate chips
  • 1/2 cup [125 mL] chopped nuts
  • 1 teaspoon [5 mL] vanilla
  • Into a medium casserole, mix together butter, evaporated milk and sugar; bring to boil stirring.
  • Still stirring, leave mixture to boil for 5 minutes.
  • Remove casserole from heat.
  • Mix in miniature marshmallows, semi-sweet chocolate chips, chopped nuts and vanilla.
  • Beat vigourously for approximately 1 minute, to completely melt marshmallows and well mix together all ingredients.
  • Pour mixture a buttered square 8-inch [20-cm] pan.
  • Leave to cool completely, before cutting into squares.
