Crunchy Twice-Baked Potatoes

  • 4 large baking potatoes, baked until done
  • 1/2 cup [125 mL] melted butter
  • 1/2 cup [125 mL] milk
  • 1 cup [250 mL] fried crispy bacon slices, diced
  • 3 cups [750 mL] crushed fritos
  • 1/4 cup [60 mL] diced green onion
  • 2 cups [500 mL] grated Cheddar cheese
  • Half baked potatoes lengthwise; scoop out the inside, reserving potato skins.
  • Mash scooped out potato with melted butter and milk.
  • Add bacon dices, 2 cups [500 mL] crushed fritos, green onion dices and half of grated cheese.
  • Mix; stuff potato skins with mixture.
  • Sprinkle stuffed potatoes with remaining 1 cup [250 mL] grated cheese and 1 cup [250 mL] crushed fritos.
  • Bake into a preheated 350°F [180°C] oven for 20 minutes.
