- Unpeeled firm mature potatoes

- Preheat oven to 450°F [230°C].
- Scrub potatoes with a brush under cold running water to remove all dirt.
- Well pat dry potatoes using paper toweling.
- Bake potatoes onto oven rack, slightly apart from each other, wrapped into al foil if desired but skin will not be as crunchy.
- Bake large potatoes for 1 hour, medium ones for 50 minutes and smaller potatoes for 40 to 45 minutes.
- Check for donenes by piercing potatoes with the pointed tip of a knife.
- To get thick crackling potato skins, bake unwrapped medium potatoes for 1 1/2 hours, larger ones for 2 hours.
