Bean Sprout Fritters

Comments: Try these with drained corn kernels, freshly boiled or canned, mixing liquid with milk [do not exceed required liquid quantity].

  • 8 ounces [227 g] fresh or canned bean sprouts [reserve juice]
  • 1 1/2 cups [375 mL] flour
  • 3 teaspoons [15 mL] baking powder
  • 3/4 teaspoon [3.75 mL] salt
  • 1 beaten egg
  • 1 cup [250 mL] milk [or less with reserved juice]
  • Frying oil
  • Clean bean sprouts; reserve.
  • Sift together flour, baking powder and salt.
  • Combine beaten egg, milk [mixed with juice if using canned bean sprouts] and bean sprouts.
  • Mix into flour mixture, until just moistened.
  • Dropping batter from a tablespoon [15 mL]; deep fry into hot [375°F / 190°C] oil until golden brown, about 3 to 4 minutes.
  • Drain onto paper toweling.
  • Serve immediately.
