Chop Suey

Comments: Serve chop suey as you would vegetables. Fresh bean sprouts will keep, refrigerated into their own bag for approximately 5 days, for 7 to 8 days into an airtight container.
It is also possible to boil bean sprouts in just a little water and freeze blanched bean sprouts for a few months.
Already cooked canned bean sprouts will keep for up to 1 year in a cool, dry environment.

  • 1/2 cup [125 mL] chopped green onions
  • 1/2 cup [125 mL] chopped onion
  • 1 cup [250 mL] sliced mushrooms, fresh or canned
  • 1 cup [250 mL] diagonal celery slices
  • 3 tablespoons [45 mL] vegetable oil
  • Soy sauce, to taste
  • Salt and pepper, to taste
  • 2 cups [500 mL] bean sprouts
  • Steam together green onions, onion, mushrooms [if fresh] and celery slices until soft.
  • Into a casserole, just reheat together soy sauce, salt, pepper and bean sprouts along with vegetable oil, being careful not to overcook bean sprouts.
