Braised Chestnuts

Comments: For creamy chestnuts, add 1/4 cup [60 mL] heavy cream [35%] along with the butter.
To puree chestnuts, press mixture through a food mill or puree into a food processor.

  • 1 pound [454 g] chestnuts
  • 1 cup [250 mL] beef broth
  • 1/4 teaspoon [1 mL] salt
  • 1/8 teaspoon [0.5 mL] frhesly ground pepper
  • 2 tablespoons [30 mL] butter
  • Shell chestnuts.
  • Into a saucepan, simmer together chestnuts, beef broth, salt and pepper for 15 to 20 minutes; drain.
  • Add butter over chestnuts, into saucepan, and turn-up the heat; shake pan so that chestnuts are well coated with butter.
  • Serve hot.
