Crunchie Broiled Tomatoes

  • 4 large tomatoes
  • Butter
  • 2 teaspoons [10 mL] freshly chopped oregano or marjoram or
    1 teaspoon [5 mL] dried oregano or marjoram, crumbled
  • 1/2 clove garlic, minced [optional]
  • 1 teaspoon [5 mL] salt
  • 1 cup [250 mL] buttered breadcrumbs
  • 1/4 teaspoon [1 mL] freshly ground pepper
  • Half tomatoes; arrange tomatoes, cut side up, into a shallow, buttered baking dish.
  • Mix together fresh or dried oregano or marjoram, garlic [if desired], salt, breadcrumbs and pepper.
  • Sprinkle breadcrumbs mixture evenly over tomatoes.
  • Broil, watching carefully, until crumbs brown and tomatoes heat slightly.
  • Do not overcook, the texture and the shape of the tomatoes would be ruined.
  • Serve, hot or cold.
