- 1 pound [454 g] navy beans
- 1 tablespoon [15 mL] dry mustard
- 1/2 teaspoon [2.5 mL] ground pepper
- 3/4 cup [190 mL] maple syrup
- 1/2 pound [227 g] lean salt pork [cubed if desired]
- 1 onion, sliced
- Maple sugar, to taste [optional]
- Approximately 6 cups [1.5 L] water

- Preheat oven to 300°F [150°C].
- Into a bean jar, mix together beans, dry mustard, pepper, maple syrup, lean salt pork, onion slices and, if desired, some maple sugar.
- Fill jar with water; cover the jar.
- Bake into preheated oven, for 7 to 8 hours [overnight].
