- 2 tablespoons [30 mL] margarine or butter
- 1 small onion, sliced
- 1 [10-ounce / 284-mL] can broccoli and cheese soup concentrate
- 1/3 cup [80 mL] milk
- Pepper, to taste
- 4 medium-size potatoes, boiled, peeled and then sliced
- 3 slices crisp bacon, crumbled
- Freshly minced parsley

- Into a large frypan, melt margarine or butter over medium heat.
- Melt onion slices until tender.
- Stir in broccoli and cheese soup concentrate; pour in milk, pepper to taste and bring to a boil.
- Very delicately mix in potato slices; cover.
- Lower heat; simmer for 5 minutes, stirring delicately from time to time.
- Serve, garnished with bacon crumbs and minced parsley.
