Bernard's Potatoes

This recipe was given to me by my mother-in-law, some forty years ago.
Salted pork can be sliced, pan-fried, drained completely, cooled and eaten, just like chips.

| Ingredients | Preparation |
- 6 to 7 medium-size potatoes
- 1 medium-size onion
- 1/4 pound [113 g] lean salted pork
- Water
- Salt and pepper, to taste
|
- Peel and wash potatoes; reserve.
- Peel and finely dice onion; reserve.
- Cut salted pork into small dices; brown into a casserole, over medium heat.
- Remove salted pork dices; drain onto paper toweling.
- Add reserved potatoes and onion dices to casserole.
- Pour in water, up to half of potatoes.
- Sprinkle with salt and pepper.
- Simmer until potatoes are tender.
