Bernard's Potatoes

Comments: This recipe was given to me by my mother-in-law, some forty years ago.
Salted pork can be sliced, pan-fried, drained completely, cooled and eaten, just like chips.
IngredientsPreparation
  • 6 to 7 medium-size potatoes
  • 1 medium-size onion
  • 1/4 pound [113 g] lean salted pork
  • Water
  • Salt and pepper, to taste
  • Peel and wash potatoes; reserve.
  • Peel and finely dice onion; reserve.
  • Cut salted pork into small dices; brown into a casserole, over medium heat.
  • Remove salted pork dices; drain onto paper toweling.
  • Add reserved potatoes and onion dices to casserole.
  • Pour in water, up to half of potatoes.
  • Sprinkle with salt and pepper.
  • Simmer until potatoes are tender.
