- 4 unpeeled potatoes, boiled
- 3 or 4 tablespoons [45 or 60 mL] butter
- 3 tablespoons [45 mL] grated Cheddar cheese
- 1 teaspoon [5 mL] chopped chervil or parsley
- 1 tablespoon [15 mL] heavy cream [35%]
- Salt and pepper, to taste

- Peel, dice and crush potatoes.
- Mix in 3 tablespoons [45 mL] butter; salt and pepper.
- Mix in grated Cheddar cheese and chervil or parsley.
- Thoroughly mix in cream.
- Serve, hot [reheat if necessary].

- Melt remaining 1 tablespoon [15 mL] butter in a frypan.
- Shape potato mixture into patties.
- Fry potato patties for 6 to 7 minutes on each side [season with a little more salt and pepper once, while frying].
- Serve immediately.
