Cheesy Mashed Potatoes

If desired, use grated Parmesan cheese instead of Cheddar cheese.

  • 4 unpeeled potatoes, boiled
  • 3 or 4 tablespoons [45 or 60 mL] butter
  • 3 tablespoons [45 mL] grated Cheddar cheese
  • 1 teaspoon [5 mL] chopped chervil or parsley
  • 1 tablespoon [15 mL] heavy cream [35%]
  • Salt and pepper, to taste
  • Peel, dice and crush potatoes.
  • Mix in 3 tablespoons [45 mL] butter; salt and pepper.
  • Mix in grated Cheddar cheese and chervil or parsley.
  • Thoroughly mix in cream.
  • Serve, hot [reheat if necessary].

  • Melt remaining 1 tablespoon [15 mL] butter in a frypan.
  • Shape potato mixture into patties.
  • Fry potato patties for 6 to 7 minutes on each side [season with a little more salt and pepper once, while frying].
  • Serve immediately.
