Boiled Tiny Wax Beans

  • A little butter or margarine
  • 6 or more large onions, cut into large pieces
  • 1 or 2 pounds [454 g to 1 kg] salt pork [desalted into boiling water], diced
  • 5 pounds [2.27 kg] small wax beans
  • Water
  • Melt butter or margarine; brown onion pieces.
  • Add salt pork dices and wax beans.
  • Pour in enough water to almost cover completely all ingredients.
  • Cover casserole; simmer, over low heat, for approximately 5 to 6 hours.
  • Wax beans will get browned and wrinkled, but so, so good....
