- 5 potatoes, peeled
- 1 egg, beaten
- 2 tablespoons [30 mL] butter
- 3 tablespoons [45 mL] freshly chopped parsley
- 1/2 cup [125 mL] breadcrumbs

- Preheat oven to 350°F [180°C].
- Boil potatoes in lightly salted boiling water.
- Drain; dry potatoes in oven for 5 minutes.
- Puree potatoes; mix in beaten egg, butter, parsley and breadcrumbs, until just firm.
- Using two spoons, shape into bite-size potato rolls; arrange rolls onto a greased baking sheet.
- Reheat in preheated oven for approximately 5 minutes.
- Serve.
