Bite-Size Potato Rolls

  • 5 potatoes, peeled
  • 1 egg, beaten
  • 2 tablespoons [30 mL] butter
  • 3 tablespoons [45 mL] freshly chopped parsley
  • 1/2 cup [125 mL] breadcrumbs
  • Preheat oven to 350°F [180°C].
  • Boil potatoes in lightly salted boiling water.
  • Drain; dry potatoes in oven for 5 minutes.
  • Puree potatoes; mix in beaten egg, butter, parsley and breadcrumbs, until just firm.
  • Using two spoons, shape into bite-size potato rolls; arrange rolls onto a greased baking sheet.
  • Reheat in preheated oven for approximately 5 minutes.
  • Serve.
