Country-Style Baked Beans

  • 1 pound [454 g] navy beans
  • 1/2 pound [227 g] salted pork, diced
  • 1 teaspon [5 mL] dry mustard
  • 1/4 teaspoon [1 mL] black pepper
  • 2 garlic cloves, crushed
  • Water
  • 2 or 3 onions, diced
  • Rinse beans; soaks beans for 7 to 8 hours.
  • Boil beans in soaking water, for approximately 20 to 25 minutes; drain.
  • Alternately fill a jar with beans, salted pork and onion dices.
  • Mix together dry mustard, black pepper and crushed garlic in a little water.
  • Pour over beans mixture; pour in enough water to cover.
  • Cover jar; sterilize into a preheated 250°F [120°C] oven for 7 to 8 hours.
  • These can also be cooked in an electric slow-cooker.
