- 6 medium-size potatoes
- 6 medium-size carrots
- 1 onion, sliced
- 4 tablespoons [60 mL] butter
- Salt and pepper, to taste
- 1 egg, beaten
- Milk

- Boil potatoes, carrots and onion slices into boiling, salted water until done; well drain.
- Mix in 2 tablespoons [30 mL] butter, salt and pepper; puree until smooth.
- Mix in beaten egg; slowly stir in just enough milk, whipping until really light, like a somewhat dry mousse.
- Spoon mixture into 6 patties, dropping mixture onto a greased cookie sheet.
- Melt remaining butter; sprinkle patties with melted butter.
- Bake into a preheated 425°F [220°C] oven until golden browned.
- Patties can also be reheated for 15 to 20 minutes, along with a baked ham for example.
