Carrot Potato Patties

  • 6 medium-size potatoes
  • 6 medium-size carrots
  • 1 onion, sliced
  • 4 tablespoons [60 mL] butter
  • Salt and pepper, to taste
  • 1 egg, beaten
  • Milk
  • Boil potatoes, carrots and onion slices into boiling, salted water until done; well drain.
  • Mix in 2 tablespoons [30 mL] butter, salt and pepper; puree until smooth.
  • Mix in beaten egg; slowly stir in just enough milk, whipping until really light, like a somewhat dry mousse.
  • Spoon mixture into 6 patties, dropping mixture onto a greased cookie sheet.
  • Melt remaining butter; sprinkle patties with melted butter.
  • Bake into a preheated 425°F [220°C] oven until golden browned.
  • Patties can also be reheated for 15 to 20 minutes, along with a baked ham for example.
