Country-Style Blackeyed Beans

Comments: Blackeyed beans, these healthy beans that can be prepared in many ways, still are quite unknown to us.
These tender beans can either be served as a main dish or as a side dish with lamb, poultry or fish.

  • 2 tablespoons [30 mL] oil
  • 3 pounds [1.4 kg] fresh blackeyed beans, shelled [approximately 3 cups / 750 mL]
  • 2 cups [500 mL] sliced onion, broken-up into rings
  • 5 cups [1.25 L] quartered tomatoes
  • 4 garlic cloves, finely chopped
  • 1 sprig fresh savory
    or
    1 tablespoon [15 mL] dried savory
  • Salt and pepper, to taste
  • Preheat oil.
  • Cook shelled blackeyed beans in hot oil, over low heat, until tender.
  • Add and cook onion rings, until translucent.
  • Well mix in tomato quarters, chopped garlic, fresh or dried savory; salt and pepper.
  • Simmer for 8 to 10 minutes, before serving.
